The Women’s Business Center of Fayetteville will host a ribbon cutting for Alberto Lagos and Maria Mac-Eachen’s restaurant, Abby’s Empanadas on Dec. 1 from 11 a.m. to 1 p.m.
Alberto Lagos and Maria Mac-Eachen, founders of Abby’s Empanadas, are originally from Uruguay, South America, and are passionate entrepreneurs in the food industry. Abby's Empanadas offers healthy and authentic empanadas with a variety of flavors, baked with fresh ingredients and of excellent quality. Their menu includes items such as baked -Beef empanadas -Chicken Empanadas -Ham and cheese empanadas -Bacon, egg & cheese empanadas and creamed Spinach empanadas.
Alberto Lagos and Maria Mac-Eachen noticed a need for more healthy and delicious lunch options in Spring Lake and are excited to open Abby's Empanadas and fill that gap. The couple hopes not only to become a profitable business but also to inspire their community to make healthier choices.
The Women Business Center of Fayetteville and NC CEED is proud to host this Grand Opening. The organization has worked with Maria and Alberto since September 2021 and helped them to be in a position to open their doors by assisting them in their own native language Spanish with training, business plan development, connection to funding and one-on-one counseling. Maria and Alberto were one of the winners of the pitch competition in Feb. 2023.
