Kiki’s Cocina Food Truck is now up and running in Fayetteville, N.C. Owned by Angelica Carrillo and her husband Timothy Fowler, the truck serves up flavors inspired by Carrillo’s home state of California.
“When we were little, my dad had a food truck, so he taught us how to make all the aguas frescas, like Horchata, pineapple, all those. And he taught us how to make salsa. He taught us how to season meat. He taught us how to cook at a very young age. He taught us about customer service…we just grew up in that sort of lifestyle. And I've always liked to serve food, and then I like to get people's reactions. And I like making people happy through food,” shared Carrillo.
The couple took two years to build their food truck. They custom made the window and the sign, installed the exhaust, ceiling, flooring and stove to get it ready for operation.
After just a few weeks in business, Kiki’s Cocina has rapidly earned a loyal following, with enthusiastic customers lining up daily and requesting the truck in various neighborhoods. Menu bestsellers include birria tacos, birria ramen and street corn.
Currently, Angelica and her husband manage all operations, balancing business growth with the needs of their family. The truck operates on a flexible schedule, each week Carrillo updates the business’s Facebook page with the locations and times they’ll be open.
