
Fayetteville State University's eating options are expanding with the opening of a new food truck hub.
The hub, named “The Shoe,” aims to enhance the dining experience for students, faculty and staff. It can accommodate up to six food trucks daily, with one being an FSU-run truck.
The Shoe will have a soft opening on Monday, Sept. 21. Students will be able to use their meal plan to purchase food from the trucks.
“Our partner Aramark, who we contract with for dining services, they had shared that other campuses around the country… have expanded their dining services to bring entrepreneurial food trucks on campus,” explained Chief Operating Officer Dr. Hector Molina.
Over 60 food trucks have shown interest in joining the campus community, with a couple dozen already committing to participate.
Food trucks will be operational for lunch and dinner, with ongoing communication to inform the campus about the weekly rotation of trucks. With the soft opening and the initial days in operation, university leadership will be able to gauge interest and input and establish a solid schedule for The Shoe.
Dr. Molina expressed his enthusiasm for bringing new food options to the students and staff.
“You know, the cafeteria is good, but the students like to have a little bit of variety, so it’s exciting,” Molina shared.
