
8 Shots Cantina, the latest addition to Aberdeen’s culinary scene, sets out to redefine the typical Mexican restaurant experience in the region. At the helm are partners Miguel Cuevas and Miguel Araiza with deep roots in the industry, bringing a blend of expertise and a distinct vision to the table.
Cuevas and Araiza aim is to create an environment where both the quality of food and the overall experience set them apart. They focus on innovative dishes, attentive service and a vibrant atmosphere.
“One of our goals has always been to differentiate from other Mexican restaurants. And that's not just to feel that we're different. Anyone can say they're different, but we want to portray that in our dishes, in our drinks, and in the vibe in the restaurant,” shared Araiza.
The restaurant’s menu is carefully crafted, featuring inventive takes on fan favorites. Standout offerings include a birria chimichanga and the enchiladas, which have quickly become customer favorites. The ceviche tower has also proven to be a hit across a broad group of diners. The restaurant also has a full bar serving an array of drinks to complement the menu.
The choice to open in Aberdeen was influenced by the area’s rapid growth, proximity to prominent gyms and reputation as home to some of the nation’s best golf courses. Though the process took time—requiring the right location and supportive partners—the team ultimately found an opportunity that matched their ambitions. After being open for just over a month, the owners have already heard great feedback from diners.
“[The customers,] they love the presentation, they love the dishes, they love the food, they love the flavors,” added Araiza.
8 Shots Cantina is also notable for its sports-friendly and family-oriented atmosphere. Large-screen TVs allow guests to enjoy games or golf tournaments with their meals.
The restaurant operates from 11 a.m. to 9:30 p.m. Monday through Thursday; 11 a.m. to 10:30 p.m. on Fridays and Saturdays; and 11 a.m. to 9 p.m. on Sundays.
Looking ahead, 8 Shots Cantina has ambitious goals. The owners wish to become a mainstay in the Aberdeen-Pinehurst region – known not just as a great Mexican restaurant but as a top dining destination for all occasions. Plans include expanding into catering and forging partnerships with local schools and organizations, further cementing their role in the community.
