Lexi Weldon started Three Legged Dog Coffee by combining her long-standing interest in coffee with her passion for entrepreneurship. Weldon opened her mobile coffee trailer in October 2025 and quickly became a hit among community members.
The business is named in honor of Weldon’s pet dog, who has three legs. Her dog Champion became the face of the brand and captured customers’ hearts just as he had captured Weldon’s when she adopted him.
Three Legged Dog Coffee’s signature summer drinks are the Beach Blondie and the Cinnamon Roll Latte. Come fall, the menu will feature a Pumpkin Brulee Latte. Weldon shared that customers also love the cold foam she serves on drinks: banana cold foam for the summer and pumpkin cold foam for the fall.
The mobile coffee bar’s home base is in Spring Lake, just outside the Anderson Creek Crossing Gate. Customers can find the coffee cart outside of the Lions Den Power House Gym and the Scorpius MMA gym. Every Sunday, Weldon shares her schedule on social media so guests can check if she’ll be in her usual spot or a new location. She travels to Fayetteville, Southern Pines and Sanford, sharing her specialty drinks.
“My favorite part has been interacting with the community and building relationships with my regulars…it’s just been a very rewarding experience to have that relationship with people in the community that I would never have had had I not started a business that’s community-facing like this,” shared Weldon.
Looking forward, Weldon shared that she’s interested in expanding into the catering and private event industry.
As the business approaches its first anniversary, Weldon will be sharing details about a celebratory event coming up, where the coffee trailer’s mascot, Champion, will be in attendance.
